Why this fits a family on a budget
Soy sauce and rice are already in your pantry, so the soy-garlic glaze comes together without an extra trip to the store. Salmon rounds out the week with something different from chicken and beef, and 40 minutes still keeps you inside your time limit.
Ingredients
• 1.5 lb salmon fillets
• 3 tbsp soy sauce
• 1 stick butter
• 3 clove garlic
• 2 tbsp honey
• 1.5 cup white rice
• 2 each broccoli
• 2 tbsp olive oil
• 1 each lemon
• 0.5 tsp black pepper
• 1 tsp salt
• 1 tbsp sesame seeds
Instructions
1. Preheat oven to 400°F. Line a baking sheet with foil.
2. Cook rice according to package directions — usually 1.5 cups rice to 2.25 cups water, bring to a boil, cover and simmer 18 minutes on low.
3. Mince garlic. In a small saucepan over medium-low heat, melt butter then add garlic and cook 1 minute until softened. Stir in soy sauce, honey, and a squeeze of lemon juice. Simmer 2 minutes until slightly thickened. Remove from heat.
4. Cut broccoli into florets, toss with olive oil, salt, and pepper, and spread on one half of the baking sheet.
5. Pat salmon fillets dry and place skin-side down on the other half of the baking sheet. Spoon about half the soy-butter glaze over the top of each fillet.
6. Roast at 400°F for 12–15 minutes. Salmon is done when it flakes easily with a fork and the thickest part looks opaque. Broccoli should have some charred edges.
7. Spoon remaining glaze over salmon right before serving. Sprinkle sesame seeds over everything. Serve over rice.
Contains: fish, dairy, soy, sesame. Always double-check labels for your household's allergies.
